Formerly Fujiwara Kanefusai, one of the well known swordsmith in Seki-city Gifu prefecture. 800-years old history of blade-making, using at cooking school either home kitchen. The blade is tough, 7:3 right side edge allocation, ergonomic plywood handle, and incredible quality in spite of affordable price. Material availability is Molybdenum vanadium steel, SK4 for western style. White 2 steel and VG5 stainless steel for Japanese knife. Excellent heat treatment, great cutting performance, and easy to customize edge style. Having Japanese swordsmith's spirits with affordable price is no other than Seki-Souma knives.

I bought this pocket-size Higonokami with the leather holder as a gift for a friend and it was very well appreciated. The smaller size is great for everyday carry and the Aogami warikomi steel is good quality. The brown holder is a nice touch for protection / presentation. Excellent Tools dispatched quickly as expected. Very happy overall!
Great mandoline slicer! I've only used this Benriner a couple of times so far, but I'm very happy with it. It's well-made, cuts cleanly and evenly, and feels sturdy. This Higonokami with Aogami warikomi steel is beautifully made. The 75mm blade is the perfect size. The brass handle has a nice weight and the blue steel edge holds a razor-sharp edge. So far so good! Excellent Tools were very helpful and responsive and dispatched the item (with others) quickly and everything arrived in perfect condition. Very happy with this purchase - highly recommended!

Solid knife works as advertised. Very sharp out of box and the handle is good for what it is. Looks nice after some mineral oil and beeswax was allowed to soak in. I'm getting the single bevel pairing knife from the same maker because I liked this so much. I may re-handle this if I find or make a wa small enough. The texture and grind of this blade make it glide through protein easily for sure. I know it says that in the description, but this is my first time owning a deba and it really is something special. I will not be forcing a patina because I want the use of the knife to tell a story on the blade. Recommended.

This is my gateway yasugi Hitachi metal shiragami steel. I was specifically looking for a single bevel geometry. At this price I was fully prepared for the product to arrive not fully sharpened, and in need of touching up on whetstones before use. To my great surprise what arrived was the sharpest knife I'd ever cut with, and I have yet to need touching my new deba with a strop or whetstone, even after hours of cutting many kilograms of ingredients. I am beyond impressed with the high performance sharpness and edge retention. As a bonus side effect, the urasaki and hagane edge has taken on a most attractive iridescent blue purple green yellow orange natural patina after several uses , after wearing away the protective lacquer coating. The charm of the rainbow natural patina beauty has made me fall deeper in love. I thought I knew what sharp was from my experience honing and sharpening with whetstones, but the single bevel angle grind of this deba was on a whole different level
The shirogami2 steel edge retention is so impressive. I can honestly say I didn't know true sharpness until I got this shirogami2 deba by mikihisa ontoy hands and started using it. I would highly recommend this deba to anyone looking to experience what true sharpness and edge retention is, and to be initiated into the tamahagane cult of elite high carbon steel high performance chef knives. The clean cut slicing performance of this deba is like a surgical scalpel. I use it on vegetables mostly and it's become my most used kitchen knife at the moment. Amazing.
