Formerly Fujiwara Kanefusai, one of the well known swordsmith in Seki-city Gifu prefecture. 800-years old history of blade-making, using at cooking school either home kitchen. The blade is tough, 7:3 right side edge allocation, ergonomic plywood handle, and incredible quality in spite of affordable price. Material availability is Molybdenum vanadium steel, SK4 for western style. White 2 steel and VG5 stainless steel for Japanese knife. Excellent heat treatment, great cutting performance, and easy to customize edge style.
